Sweet Potatoe Biscuits

In search of healthy homemade recipes for the birds I went to the organic food store today, grabbed a variety of stuff and decided to just wing it and see what I could come up with.  There are a lot of wonderful places to buy organic foods for your birds (Avian Organics is one Parrotnutz another) but if you like to cook yourself and have the time then here is one for you to try!

Sweet Potato Biscuits
1 C. Flax Seed Meal
1/4 C. Amaranth Flour
1/2 C. Almond Meal Flour
1/4 C. Millet Flour
1 C. Whole Wheat Flour
1/2 C.  Blue Diamond Almond Breeze (or nondairy beverage of your choice even water)
1/4 C. Water
2 Large Eggs
1 tsp. Coconut Oil
1 tsp. Molasses
1 Large Cooked and Mashed Sweet Potato
Whole Flax Seeds

Preheat oven to 350.  Boil or cook the pealed sweet potato in the microwave until tender.  While that is cooking mix together all dry ingredients.  When the sweet potato is done mash it then add the eggs, coconut oil, molasses and 1/4 C. Almond Breeze and water in with it and mix until combined.  Mix the Sweet Potato mixture into the dry ingredients (batter will be stiff).  If you want thinner bars use a large cookie sheet, if thicker is desired then a 9 x 13 cake pan would be good (although extend the cooking time).  Spread the mixture evenly into the pan sprinkle with whole flax seeds and cook for about 25-30 minutes (lining the pan with foil makes for easy clean up - please recycle!).  Let cool slightly then cut with pizza cutter or knife.  I imagine this would work with just about any combination of flours as long as the amount equaled what is in the recipe.
